Simple Salsa Recipe

Mexican food is having quite the revival at the moment.  Personally I love anything involving guacamole and melted cheese but I’m even more enamoured with coriander.

It’s a contentious herb.  A friend once coined it the “devil’s weed” so this salsa is probably not for him.  For anyone else not particularly impressed with the store bought stuff I guarantee this is so easy you’ll never need buy it again.

1. Get yourself some tinned tomatoes.

2. Measure one tablespoon of brown sugar.

1. Quarter an onion

2. Measure around 1/4 of a cup of jarred jalapenos

3. Roughly chop one cup of coriander.  I like to use most of the root since this is where most of the flavour is.

Throw all the ingredients into a blender with a pinch of salt and a few tablespoons of water.  Pulse gently until the consistency is to your liking.

Enjoy with corn chips, fajitas or beer.  If you used a few too many jalapenos, you’ll need it.

  1. I’m a sucker for Mexican food and a lover of coriander, so this salsa is a winner in my book. Might have to put my stretchy pants on, whip this salsa up, slather it over a massive bowl of nachos and enjoy a night in. Yum!
