This dish gets around. In fact, it’s been flaunting its wares around our family parties for years yet somehow manages to keep its reputation in tact. Probably because it’s healthy, the kids (usually) eat it and quick. It’s a great “bring a plate” dish too.
Grate 375 g (about 2) zucchinis and one onion. Squeeze out the excess juice.
Add 1 cup of Self Raising flour
Add 1/2 cup of Olive Oil
Add 5 (6 if small) lightly beaten eggs and mix
For a variation you can add some bacon and/or capsicum or keep it plain. Season with salt and pepper and bake in a greased oven dish in a moderate oven until lightly browned.
I served mine with some sweet potato chips this week. Just combine some oil, salt, sugar to caramelise and spices of your choice (paprika works well) in a bowl. Coat well and bake until cooked.
